We always remember this day as a tragic and
terrible loss filled with disaster.
With the tragedy there was also shared
many heartfelt stories of miracles of survival and hope.

 We have a recipe for
 Zucchini Lemon Cake
which I received from my dear friend
Cindy McEntee in Oregon
I  made a few changes and modified
it so here is the new recipe:

Zucchini Lemon Cake
2 cups flour
1/2 tsp salt
2 tsp. Baking Powder
2 eggs
1/2 cup oil
1 1/3 cup sugar
3 TBSP lemon juice
1/2 cup buttermilk
1 cup grated zucchini

Mix all ingredients together and bake in a large sheet cake pan.
350 for 12-15 minutes do not over bake.
While warm top with lemon glaze frosting:
1/2 cup butter
1/4 cup milk
5 cups powdered sugar
1 tsp lemon juice
zest from lemon
Melt the butter add milk in sauce pan.
Remove from heat add the powdered sugar and the lemon juice.
 Pour over warm cake.
 Let cool and serve!

Although 9-11 for America is a sad day…
for me as a Grandma it was a great day.
